Happy Tuesday, Shopaholics! Sorry I don't have anything fun for you today - I had big plans. Sadly my migraine had other plans. I'm home lounging and trying to get over it - and will be back tomorrow.

    Ugh. I get migraines too and they are the absolute worst. Hope you get better soon.

    Something that works for me: take a washcloth or other small towel. Wet it, wring it out so it's just damp, and microwave it. Lie down with your eyes closed, and put it on your head. The heat from that opens up the blood vessels in your head which helps with migraines a bit.

Today I will celebrate my birthday. I'm a little bit sad to report, the DH is out of town and won't be able to come home for the festivities. Not that it's a big deal or anything (not a milestone birthday or anything), but I am a LEO and y'all know it's true - Leos love their birthday. I'm no exception! Gulf Coast Style Seafood: West Indies Salad Recipe

Happy Monday! Here on the Gulf Coast, we are always preparing and cooking seafood. Today I thought I would share one of our favorite recipes - West Indies Salad. This is prepared with lump crabmeat and is a warm weather favorite. We make this often on the weekends, and it's one of the DH's favorites. West Indies Salad Ingredients: (1) medium Onion, finely chopped (1) lb. lump crabmeat (4) oz. Wesson oil (3) oz. cider vinegar (4) oz. Ice Water Salt & Pepper Spread half of onion over bottom of large bowl. Cover with separated crab lumps and then remaining onion. Salt and Pepper. Then (in this order) pour oil, vinegar, and ice water over all. Cover and marinate at least 8 and up to 12 hours. Toss lightly before serving.  West Indies Salad is commonly served over crackers, and believe it or not, plain Saltines are a great choice!
