Guest Blog: Glazed Carrots With A Difference from Cookin' With The Vegan Quintet

Hi Shopaholics! I'm Caitlin, Lori's Lilly-loving vegan bestie from Virginia. Lori is showcasing holiday recipes through the end of the year and asked me to share my famous Glazed Carrots with a Difference. These are the only glazed carrots I've ever eaten so I'm not sure what the difference the name refers to...maybe the onions? Anyhoo, they are DELICIOUS and so easy to make!
Serves 4
2 cups peeled and sliced carrots (use real carrots, not the babies, they have so much more flavor and are worth the effort)
1 medium onion diced (Did you know that if you put a piece of bread in your mouth your eyes won't tear while you chop onions?)
1/4 cup packed light brown sugar
2 tablespoons margarine,melted
1/4 teaspoon ground cinnamon
Steam the carrots in a small amount of water until tender, about 8 minutes. Drain thoroughly. (I leave them in the colander for a minute or two, because if they're still pretty wet when you start mixing with the other ingredients it'll water everything down.)
In a medium saucepan, combine the carrots, onion, brown sugar, margarine and cinnamon. Simmer, stirring occasionally, for 15 minutes or until tender.
That's it, serve and enjoy :)
